Add pepper flakes and simmer for 15 min. Add peanut butter powder & whisk; simmer 5 more minutes and add spinach; cover until spinach is wilted. Serve with tofu, over rice.
  2. While sauce is simmering, heat separate skillet and add 1 tablespoon oil, 1/2 tablespoon red curry paste & cut tofu; cook tofu on both sides until golden brown. Add to sauce.
