The ingredients needed to make Quick Easy Simmered Egg and Tofu:
  1. Prepare 1 two 150 grams packages Silken tofu
  2. Take 1 White part of a Japanese leek
  3. Make ready 5 tbsp Mentsuyu (2x concentrate)
  4. Take 200 ml Water
  5. Take 1 Egg
Instructions to make Quick Easy Simmered Egg and Tofu:
  1. Wrap the tofu in paper towels to remove the excess moisture. Cut into 4 pieces. Put the mentsuyu and tofu in a pot and turn on the heat.
  2. Using a spoon, break up each of the tofu pieces in half (to make a total of 16 pieces). Once it comes to a boil, adjust the heat so that you don't over-cook.
  3. It's okay even if you don't have a lid While the tofu is simmering, chop up the white part of the leek into 1 cm slices. Slice long diagonals out of the green parts.
  4. Once it has simmered for five minutes and the tofu has taken on the color of the mentsuyu, add the whites of the leeks and simmer for about 5 minutes until the leeks are tender.
  5. Slowly pour the beaten egg around in the pot. Then put the green parts of the onions directly on top of the eggs. Once the egg has cooked about halfway through, cover with a lid and turn off the heat. Let sit covered for 2-3 minutes to finish.
  6. Ready to serve and ENJOY!
