  2. Make ready 1 Onion
  3. Prepare 1 bell pepper chopped
  4. Make ready 1 can baby corn - halfed
  5. Make ready 1/4 cup cilantro - chopped
  6. Get 1/2 cup pad thai sauce (see ingredients)
  7. Make ready 2 tbsp ginger-minced
  8. Get 2 tbsp lime juice
  9. Make ready 2 tbsp dark brown sugar
  10. Make ready 1 box Tofu - Firm
  11. Prepare Pad Thai sauce
  12. Prepare 1/2 thai red chillie (more if desired)
  13. Make ready 1 tbsp fish sauce
  14. Prepare 1 tbsp sugar
  15. Make ready 2 tbsp ketchup
  16. Get 4 tbsp chicken stock
  17. Make ready 1 tbsp soy sauce
  18. Prepare 1 tbsp corn starch dissolved in cold water
Steps to make Thai stir fry tofu:
  1. Whisk Pad Thai Sauce, lime juice and sugar in small bowl until sugar is dissolved. Set aside.
  2. Cut tofu horizontally into 3 slices. Lay each slice between double thickness of paper towel. Press down firmly to absorb water. Changing paper towels as needed until dry.
  3. Cut each slice into 4 equal strips. Cut each strip into bite size pieces.
  4. Heat about 1/8 inch of oil in large skillet over high heat.
  5. Add tofu with enough space in between to turn over. Cook in two batches until each side is golden. Drain on paper towels. Pat tops with paper towel to remove excess oil. Set aside.
  6. Drain oil from skillet, leaving 2 tablespoons in pan. Add onion, red pepper and ginger. Stir-fry until onion is soft.
  7. Add baby corn and Pad Thai mixture. Add tofu and stir until all ingredients are coated. Mix in cilantro and serve over Jasmine Rice.
  8. Ready to serve and ENJOY!
