  11. Take 5 oz cooked vegetarian chicken, sliced
  12. Take 3-5 scallions, chopped
  13. Make ready 1/3 cup fried tofu strips
  14. Get 1 cup fresh bean sprouts
  15. Prepare Sesame seeds (optional)
Steps to make Vegetarian Pad Thai:
  1. In a bowl, combine lime juice, fish sauce, soy sauce, sugar, rice vinegar, and *sriracha. Adjust to taste. Set aside.
  2. Heat oiled pan on medium high setting. Add rice noodles to pan. Gradually pour 3/4 of sauce mixture and coat noodles evenly. Add remaining ingredients along with remaining 1/4 sauce. Stir and coat evenly.
  3. Ready to serve and ENJOY!
