  1. Drain the tofu to your liking. (This time I had some leftover water from boiling beans, so I soaked it in that for about 5 minutes and then dried it off).
  2. Put the ★ ingredients in a pan and cook over low heat, moving the onions to the side of the pan once they've become transparent. Add the tofu, cut into bite-sized pieces, and lightly brown each side.
  3. Once the tofu appears dry, add the ◎ ingredients and gently mix everything, taking care not to break up the tofu.
  4. Once the soy sauce begins to scorch along the sides of the pan, flip everything over. As a finishing touch, sprinkle on some scallions and you're done.
  5. Ready to serve and ENJOY!
