  6. Take 3 teaspoons wasabi paste
  7. Make ready 1 tablespoon sake
  8. Prepare 1/4 cup dashi stock

  1. Soak the wood ear mushrooms in warm water for at least 4 hours.
  2. Once soaked. Drain and remove the small stem/cap as its tough.
  3. Cut tofu into 2cm cubes, pat dry then fry in air fryer for 15 minutes.
  4. Finely chop garlic and ginger. Add all wet ingredients and wasabi then stir to make a sauce.
  5. Sautee wood war mushroom for 5 minutes in 1/4 cup amount of water or dashi stock. Dashi is better.
  6. Add tofu and sauce. Stir fry around 5 minutes until sauce is thickened and coats the tofu.
  7. Serve on its own for a low carb meal or with rice or somen noodles.
