- Cut all the vegetables in julienne strips.In another pot prepare noodles by adding little salt and oil..when the noodles are properly cooked strain them and pass through tap water so that noodles don’t turn out to a sticky consistency.In a hot skillet add two tablespoon oil.When the oil is hot enough add chopped onions.saute for two minutes..
- Add in chopped garlic and ginger,keep stirring.Now add all the vegetables.saute for two more minutes,don’t overcook.Add in cherry tomatoes and keep tossing occasionally for few more minutes.
- Add Maggi masala powder and chilli flakes (as par your preference).give it a toss.now add water soaked tofu cubes,toss them nicely.add water generously.
- Now add noodles,add salt.Be careful about the measurement of salt as soya sauce and sweet chilli sauce are already salty.Turn off the burner immediately.Don’t overcook noodles.The entire process of preparing thukpa does not take more than 10 minutes.Try to keep vegetables as crunchy as possible.Serve hot.
