The ingredients needed to make Tofu Katsu Curry:
  1. Take block Tofu
  2. Make ready curry cube
  3. Get rice
  4. Prepare cooking oil
  5. Make ready onion
  6. Prepare tomatoes
  7. Prepare egg plant
  8. Get red paprika
  9. Prepare coriander
  10. Make ready potatoes
  11. Make ready Dusting flour
  12. Prepare egg
  13. Take Coating breadcrumbs

Steps to make Tofu Katsu Curry:
  1. Prepare your rice as usual.
  2. Wash and chop your vegetables as the rice cooks.
  3. Add 2tbsp oil to a pan on high heat
  4. Add your onions first and cook till golden brown
  5. Add your tomatoes and potatoes.
  6. When the potatoes are halfway cooked, add your Egg plant.
  7. Add the red paprika and coriander lastly. Cook as you stir for about 3mins.
  8. Add 2 cups water and bring to a boil.
  9. Chop your curry cube into smaller pieces and add into your pan. Switch off the heat before mixing.
  10. Mix until all the curry cube is dissolved and you have thick consistency.
  11. Cut your Tofu into 4 rectangular pieces.
  12. Dust in flour then dip in the beaten egg and lastly coat with your breadcrumbs.
  13. Deep fry the tofu till golden brown.
  14. Serving: start with the rice on one half of the plate and your curry on the second half.
  15. Cut your Tofu into bite size strips and place in the middle of the plate.
  16. Add Tonkatsu sauce to your liking as sauce for the tofu.
  17. Ready to serve and ENJOY!
