The ingredients needed to make Massaman Curry:
  1. Prepare massaman curry paste (can) (1:1 ratio with curry paste)
  2. Take coconut milk (can) (1:1 ratio with curry paste)
  3. Make ready potato(es) – however many you want, more than the carrots
  4. Prepare carrot(s) – however many you want, less than the potatoes
  5. Make ready extremely firm tofu – somewhere between the carrots and potatoes
  6. Prepare cashews and/or peanuts – just a few
  7. Prepare onion – however much you want
  8. Take avocado
  9. Prepare garlic
  10. Take basil
Instructions to make Massaman Curry:
  1. Place pot on stove
  2. Turn the stove on (medium or greater) and cover.
  3. Open can(s) of curry paste with a can opener/knife
  4. Scoop curry paste into the pot. Flatten to the bottom of the pot
  5. Dice 1 clove of garlic
  6. Add garlic to the pot. Sauté until you can smell the curry paste
  7. Open can(s) of coconut milk with a can opener/knife
  8. Pour coconut milk into the pot. Mix milk with curry paste and garlic.
  9. Wash your potatoes, carrots, and onion.
  10. Cut the potatoes, carrots, and onion to the desired size.
  11. Add the potatoes, carrots, and onion to the pot, and stir to incorporate. Cover your pot.
  12. Remove the tofu from its packaging and remove any excess water.
  13. Cut the tofu to the desired size
  14. As the potatoes/carrots approach the desired softness, add tofu.
  15. Add peanuts and/or cashews to the pot, and stir to incorporate.
  16. Rinse your avocado
  17. Quarter and dice your avocado
  18. Turn heat off when tofu is cooked, but before it becomes mushy
  19. Scoop curry into a bowl (do what you want)
  20. Add avocado on top
  21. Consume
  22. Ready to serve and ENJOY!
