- Then add another tbsp oil to the pan over a medium heat and add all of the veg. Cook for a minute before adding 2 tbsp water, cover with a lid and steam for 2 minutes. Remove the lid and cook on a high heat for another minute or two until the veg starts to soften.
- Finally add the tofu back into the pan with the sauce. Bring to the boil and then simmer until the sauce thickens. Add the basil and serve with rice.
