The tofu cubes have a super crispy exterior and a soft and silky center. The dish is very easy to make and ready in less than an hour. The tofu is seasoned simply with a salt and white pepper mix. White pepper is used in Chinese dishes because it has a more mild flavor compared to black pepper.

Crispy salt and pepper tofu is one of the most popular of current trending foods in the world. It is easy, it is quick, it tastes yummy. It is enjoyed by millions every day. They are nice and they look fantastic. Crispy salt and pepper tofu is something that I’ve loved my whole life.

To begin with this recipe, we have to first prepare a few components. You can cook crispy salt and pepper tofu using 9 ingredients and 9 steps. Here is how you can achieve it.

The ingredients needed to make Crispy salt and pepper tofu:
  1. Get firm tofu
  2. Take cornstarch
  3. Prepare ground white pepper
  4. Prepare salt
  5. Prepare Canola oil for frying
  6. Take Garnishes:
  7. Prepare red chillies seeds removed and thinly sliced
  8. Make ready spring onion thinly sliced
  9. Take Ground black pepper

Salt and pepper tofu or pork was one those dishes I've always loved growing up since it's so delicious to enjoy as is or served over rice! I love to scoop up the crispy pieces of garlic, chilies and peppers to have over my rice. Chinese salt and pepper is slightly different from the familiar salt and ground pepper. Instead we use Sichuan peppercorn and salt.

Steps to make Crispy salt and pepper tofu:
  1. Place tofu block into a cutting board. Place a second cutting board over tofu. Place a heavy object on top of the cutting board, preferably a heavy can. Apply the weight on the tofu for about 15 - 20 minutes, to release water from tofu.
  2. Slice tofu into 1 inch cubes. Pat dry the tofu cubes with paper towel.
  3. Add about 1 inch of oil to pan being used for frying. Bring to medium heat.
  4. In a small bowl, combine cornstarch, white pepper, and salt. Add to a large ziploc bag. Add in tofu and seal bag. Shake bag several times until tofu is evenly coated in starch.
  5. When oil is hot, add a few pieces of tofu and fry until crispy on all sides before removing. Because you are using cornstarch instead of flour, the battered tofu will not change that much colour when finished cooking. Instead of a golden brown, the tofu cubes will be a pale yellow gold.
  6. Repeat with remaining tofu until all tofu is fried. Keep tofu waiting to be fried in the cornstarch bag.
  7. If you lay down the tofu cubes to rest while waiting, they will release more water and will soak through the cornstarch coating and cause it fall off.
  8. When tofu is fried, you can garnish with chilli, spring onion and ground black pepper.
  9. You can include a chilli sauce to dip the tofu cubes. In this recipe I used firm tofu because it is easier to handle. However, the tofu is even silkier if you use a soft tofu.
  10. Ready to serve and ENJOY!

Chinese salt and pepper is slightly different from the familiar salt and ground pepper. Instead we use Sichuan peppercorn and salt. Thicker tofu can form a very good crispy and soft comparison and prevent taste from drying. Chinese Peppercorn salt is mainly Sichuan peppercorn and salt.
